Combine miso paste, water, sesame oil, soy sauce, ginger paste, and garlic paste. Bring to a gentle boil, then simmer for 10–15 minutes.
Prepare your noodles of choice and chop your vegetables.
Add vegetables to the simmering broth for a few minutes.
