Slaw is here because a sharp, crunchy side dish changes the character of a meal. The chicken tenders, the fishcakes and the kebabs are all improved by having something fresh alongside them, and this takes about five minutes to make.
Finely shred ¼ white cabbage using a sharp knife.
Peel and grate 1 carrot and 1 apple.
Add everything to a large bowl.
Add 2 tbsp sunflower oil, 1 tbsp vinegar and a good pinch of salt.
Mix well until everything is evenly coated.
Taste and adjust seasoning if needed — it should taste fresh, slightly sharp and lightly salted.
