Chicken Fajitas

Fajitas teach you how to manage a hot pan with multiple ingredients. The key moment is sequencing. Cook the chicken first, add spices to build flavour, then add vegetables so they soften and colour without going soggy.

Chicken Fajitas

Ingredients

  • 500 g chicken breast
  • 2 peppers
  • 1 onion
  • 2 tbsp sunflower oil
  • 2 tbsp fajita seasoning (or spice mix)
  • Salt
  • Black pepper
  • To serve (optional):
  • Wraps
  • Grated cheese
  • Sour cream
  • Salsa

Method

  • Step 1

    Slice 500 g chicken breast into thin strips.

  • Step 2

    Slice 2 peppers and 1 onion into strips.

  • Step 3

    Heat 2 tbsp sunflower oil in a large frying pan over medium-high heat.

  • Step 4

    Add the chicken and cook for 4–5 minutes until lightly coloured.

  • Step 5

    Add 2 tbsp fajita seasoning and stir well to coat the chicken.

  • Step 6

    Add the peppers and onion. Cook for 6–8 minutes, stirring regularly, until the vegetables are softened and slightly charred and the chicken is fully cooked.

  • Step 7

    Season with salt and black pepper to taste.

  • Step 8

    Serve immediately with wraps and any extras.

Tips

  • Can be refrigerated for 2 days. Reheat in a pan until hot. Not ideal for freezing.
